Watermelon Crush

It's Autumn but are you still feeling the heat? Here's something cool to quench your thirst!

Preparation: 10 minutes preparation + 5 minutes cooking (freezing time extra)
Serves: 5 serves of fruit in this recipe

Ingredients:

  • ½ cup castor sugar
  • 300mL water
  • 750g watermelon flesh, seeds removed
  • 2 tablespoons lemon juice

Method:

Put sugar and water in a saucepan and bring to the boil for 5 minutes then cool. Puree watermelon flesh in a blender. Add sugar syrup and lemon juice and mix well. Put into a tray and place in freezer. When the mixture starts to set, remove from freezer and blend well or mix it with a fork, then place it back in the freezer. Remove from freezer 15 minutes prior to serving. Spoon into serving glasses.

Made to serve 4.

Hint:

This can be made in an ice cream machine, following manufacturer’s directions.

Variation:

Substitute stewed or canned fruit, which has been well drained and increase lemon juice to 3 tablespoons.
